Chayote Pickles an unusual pickle recipe from Grandma she had a huge chayote plant & made everything from stews, soups & I guess even pickles.
- 12 Chayotes Sliced Thickly
- 6 Onions Sliced
- 1 Cooked Chicken Torn apart by hand
- 2 Green Bell Peppers Sliced
Sprinkle a 1/2 cup of salt toss and let stand & drain for an hour
- 3 Cups Cider Vinegar
- 2 Cups Sugar
- 2 Cups Water
- 2 tsp Celery Seed
- 2 tsp Tumeric
- 1/2 Cup Sliced Pimento (Optional)
Bring to boil then add vegetables, cook 5 minutes then seal a jar at a time. Put pickles in the refrigerator before opening and they will be crisp.
